Sodium Erythorbate is the sodium salt of Erythorbic Acid, itself an isomer of Ascorbic Acid. It is a synthetic antioxidant which is used in nutrition to preserve the color and taste of foodstuffs. It is mainly used in canned meats and deli meats, and some canned and frozen fish.
