It is used in the treatment of certain fruits, in drinks, in flours. It is also a water-soluble vitamin that is involved in various cellular oxidation-reduction reactions. It plays an essential role in the body to stimulate the immune defenses and prevent oxidation, and therefore cell aging. It is used in its "99% crystal" form in human and animal food. It is also available in "97% coated" and "35% monophosphate" forms for animal nutrition.
